YUMMM! I love Crumbl Cookies and these taste and look just like them. Something else I'm obsessed with: Oreos. A Crumble cookie and Oreos combined?! Who can resist that?? I certainly couldn't, so I decided to make my own. I love the rotating menu at Crumbl but that also means that you can't always have the flavors you want. This way you can always have a delicious chocolate Oreo cookie without having to wait in line or pay 4 dollars. 

A note about room temperature cream cheese, butter, and eggs:
I know that it's annoying to have to plan ahead and take the cream cheese and butter out before you start baking, but trust me, it's crucial for these cookies. Room temperature butter and cream cheese result in a creamy frosting and fluffy cookies. If they are too cold the frosting gets lumpy and the cookies are dense. Cold eggs also make the cookies more dense and sometimes can cause the batter to curdle. Here's some more information on room temperature ingredients form the blog, Sally's Baking Addiction. Here's the recipe!

MAKES ABOUT 10 COOKIES

C O O K I E D O U G H

1/2 cup (1 stick, 8 Tbs) unsalted butter (room temp!!)

1/2 cup golden brown sugar

1/4 cup granulated sugar

1 egg (room temp!!)

1 tsp vanilla extract

25 oreos (divided)

1 1/4 cups all-purpose flour

1/3 cup cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt


F R O S T I N G

8 oz cream cheese (room temp!!)

4 Tbs (1/2 stick) unsalted butter (room temp!!)

1 Tbs Oreo cream filling

1 tsp vanilla

3 1/4 cups powdered sugar

1 Tbs Oreo crumbs


Make the cookies:


1.

Preheat the oven to 350℉. Line a baking sheet with parchment paper.

Using a stand mixer fitted with a paddle attachment, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes on medium-high speed. Add the egg and vanilla and mix until well combined.

Split the Oreos in half and put the cookies in one bowl and the cream filling in another. Set the cream filling aside. Crush the Oreos until they are fine crumbs.

In a large bowl combine 1 1/2 cups crushed Oreo cookies, flour, cocoa powder, baking powder, baking soda, and salt. Whisk to combine. Set aside the leftover crushed Oreo cookies for later.

Add the dry ingredients into the mixer and mix until combined. If the dough is too dry and not sticking together, add 1 Tbs. milk.

Pack the dough into 1/4 cup measuring cup and roll into a ball. Roll the ball in the leftover crushed Oreo cookies. Place on a baking sheet and press down into thick disks. Bake for 11 - 13 minutes or until the edges are starting to set. Don't worry if they are not fully baked, they will continue to bake on the tray out of the oven.


Make the frosting:

Using a stand mixer fitted with a paddle attachment, cream together the cream cheese, butter, and Oreo cream filling until light and fluffy, about 2 minutes on medium-high speed, scraping down the bowl after one minute.

Add in the vanilla, powdered sugar, and Oreo crumbs, and mix to combine. If the frosting is too thick you can add a little bit of milk. If the frosting it too thin you can add some more powdered sugar. Set aside the crushed Oreo cookies, you will use them later.


Assemble:

Once the cookies are completely cooled you can frost them! I would recommend using a piping bag and a round tip, but if you don't have a piping back you can always use a plastic back and cut a whole in the corner. Feel free to experiment with different shape tips too!


2.

Sprinkle cookies with leftover Oreo crumbs and enjoy!
