These tamales are delicious and surprisingly easy to make. A traditional tamale has a steamed corn husk on the outside, filled with a corn based dough wrapped around a filling of your choice. Traditional fillings include meat or cheese and beans, but feel free to add veggies or whatever toppings you desire. I chose to mix green enchilada sauce with shredded chicken for my filling. I also added some guacamole and pico de Gallo on top. 

Here are some fun facts about tamales!

  1. The word tamale, or tamal in Spanish, comes from the Aztec word of the Nahuatl language, tamalli, which means “wrapped food.”
2. Tamales were a big part of the Aztec and Mayan culture. They even had tamale-eating festivals for the god of corn.  

3. In Mexico, tamales are served every time of day, breakfast, lunch, and dinner.
