Almond Butter Energy Balls

These are great little snacks when you're on the go. They are packed with protein and are perfect for before a workout or any other time! Here's the recipe by Sylvie K. (Me!)

MAKES ABOUT 12 ENERGY BALLS 

1/4 cup pecans
1/4 cup almonds
1/4 cup (chewy) dried apples
1 tablespoon dried cranberries
1/4 cup old fashioned rolled oats
2 teaspoons flax seed
1 teaspoon chia seeds
1 tablespoon honey
1/4 cup almond butter
1 tablespoon chopped semi-sweet chocolate

Combine the pecans and almonds in the food processor and pulse until they are chopped into small bits.

Add the dried apples and dried cranberries in the food processor and pulse until chopped into small bits.

Add the old fashioned rolled oats, flax seed, chia seeds, honey, and almond butter in the food processor and pulse until the dough starts to come together.

Fold in the chocolate. Roll the dough into balls and put them in the refrigerator for at least 30 minutes. 

Notes:
If the dough is not sticking you can add more honey or almond butter. Store in the fridge.
